If you have some spare area for a Vega garden, make the most use out of it by growing your own tomatoes, cucumbers, peppers, lettuce pumpkins, sweet corn, it all helps towards cooking healthy meals.

The most economical way of growing your own vegetables is from seeds. I find that with careful handling you can get three or four crops from one packet of seeds, whereas buying six young seedlings will cost you the same as one packet containing twenty to thirty seeds.

It’s generally the spring and summer that we give the most attention to our gardens and with careful thought as to what you will use most of, plant accordingly.

Since we have loads of salads in the summer I tend to focus on growing tomatoes, cucumber, lettuce, sweet corn, watermelons and vegetable that store well like pumpkins, butternuts, late summer you will find me growing broccoli, eggplant and peppers plus a few other crop if I’ve the space.

I’m not a fan of insecticides/ pesticides and for the most part I don’t need them. The one that’s always a problem is the white butterfly, I call these ‘Cabbage White’ as they are white and love cabbages, kale and broccoli and will lay their eggs on the underside of the leaves and once active will soon strip the plants bare. But by interspersing with Garlic, Onions, Sage or Mint you will keep them at bay, make sure the mint is in a plant pot as their root systems will takes over.

One other pest is the slug or snail, particularly when it’s wet, one tip I got off another site was to place a small container or a saucer will do, place a solution of 50% water 50% stale beer, apparently it’s to die for! Literally!

This past season vegetable garden was very successful; my only problem was lack of space to grow them. I partly overcame this by using black plastic garden bags and filling them to about 18 inch with good compost soil, in these I grew potatoes, runner beans, beetroot and butternuts.

The season was so good that I managed to grow three crops of sweet corn; I did this by planting a dozen seedlings every 5-6 weeks, giving me a near continuous crop of the sweetest corn throughout the long summer.

Another project I did to overcome the shortage of garden space was to build  an oblong boxed garden, I had an old very long plank  that I cut up, joined together and filled with 18 bags of compost. Man did those crops grow in that mix,

Part of my garden is on a slope covered mostly with brush like plants on this slope I dug several pits, filled with compost and placed butternut seedling in them, harvested about 18 butternut of a good size.

Gardening is very rewarding, it gives you a boost when visitors see your crops or taste the very food you grow.

Make good use of lawn clippings and raw food waste by recycling it, the garden will love you for it.

Sometimes you have failures and you just got to accept and learn from them, mine was trying to grow egg plants too late in the season.

To speed up your tomato plants stake them early, it encourages growth, always ensure they are well watered, but not soaked. Same with cucumbers, both plants will keep growing either up or along a string line, just as long as they and the fruit are well supported.

Runner beans are best grown on a frame of sorts; some growers will make a wigwam frame others may choose an oblong frame of about 2m high and as long as available space and material.

Do you think you eat too much? Do you get hungry during the day? These are two of the questions I often ask myself when cooking healthy meals for the family,and all too often I also hear the same from friends and family. The sentiments are widespread because it’s a controversial subject.

I’d say the majority of us in the western world would eat too much, certainly. It is said that compared to many European countries,  Americans eat a larger portion size. Australians also tend to eat larger potions while New Zealanders lean more towards the same eating habits as Europeans.

The argument for and against allowing ourselves to feel hungry is ongoing.

Some dietitians say that to effectively lose weight we must never allow ourselves to go hungry; instead we should have several smaller meals throughout the day.

I believe it depends on the individual; what suits one may not suit another. Personally I like to feel hungry, really hungry, on occasion; it’s the only way of losing weight, I have discovered, that works for me.
I have tried six meals a day and I have tried eating smaller portions of 1+veg and 1+130 grams of meat  (normally chicken or fish – red meat only occasionally).

Today I had a really healthy diet; one of the healthiest meals you culd possibly eat. Here’s a photo,

Cooking healthy meals for the family

Salmon and Spinach, A simple meal with no fuss, full of the healthiest of minerals and that will fill you enough to last several hours.
We know that salmon is rich in Omega 3 fish oil which supports joints, provides a decreased risk of cardiovascular problems such as stroke, heart attack and high blood pressure. It is rich in vitamin D , proteins, vitamin B12, selenium and vitamin B2 plus others.


you can have your spinach fresh, streamed or boiled. It contains a rich source of vitamin A , vitamin C, vitamin K , magnesium, folate, iron, vitamin B12, calcium, potassium, copper, protein, zinc, selenium, omega-3 fatty acid and vitamin B. it’s no wonder Popeye the sailor man ate so much of it.

These two foods are considered to be among the world’s healthiest and are good for the heart, eyes, brain and body.

To cook the spinach, simply steam it for 3-4 minutes.
Leaving the skin on, fry the salmon in a little rice bran oil (or my second choice, grape seed oil). Sprinkle lemon pepper over the top prior to cooking then, skin down, lay it in the pan and fry until crispy (five minutes on high).
Turn over, cook for two more minutes, and serve hot with spinach.

Recently I’ve gotten into the habit of eating one vegetable and one meat and finding it very satisfying. Only on the odd occasion do I cook a second  vegetable as can be seen in this recipe below. Mainly though I always try to cook healthy meals.

For this dish I removed the thigh skin. I then baked it after brushing a glaze over the whole piece.
The glaze ingredients were 1/4 tsp curry powder, 1 tsp honey, 1 tbsp cider vinegar, 1 garlic clove, 1 tbsp of Worcestershire  sauce. Mix well and if time permits leave it to sit for a few hours.
Bake in oven for 40 minutes at 180c

Boil carrots for ten minutes and steam the broccoli for eight minutes.
The sauce consists of 1/4 cup milk  1 tsp flour, 1 tsp dry parsley, 1 tbsp sour cream and a sprinkle of thyme.
Mix together and bring gently to the boil. Leave to simmer while plating the food then spoon over the sauce and enjoy.

Broccoli and carrots are considered to be super healthy. Both are an excellent source  of food for the eyes, brain and body.

Americas wars are taking a devastating effect on its people with much a high cost in military spending of over $690 billion dollars or nearly $2000 for every man, woman and child, only Israel spends more, but they are surrounded by countries that want to annihilate them.

Many of the foods we eat today have possible effect on us over a long period of time. Liken it to smoking, you have one or two cigarette and long term no harm will befall you, on the other hand smoke 10, 20 or more a day and over the long-term you will more than likely be either dying of cancer or heart disease or have respiratory problems and wishing you never started smoking. These things we know, yet still millions of people worldwide, smoke. They really believe it won’t happen to them.

The same applies with food, it’s estimated that about half the population of the USA will have diabetes by 2020. Currently 4.5 million people in the US suffer from Alzheimer’s disease. Obesity has been declared a disease; 45 million America citizens are obese according to the latest figure released in 2013.

Millions of people are killing themselves by the very food they eat, needless deaths that can be avoided.

You can eat cakes, cookies that includes healthy ingredients like Buck wheat flour instead of white flour, Stevia as a sweetener instead of white sugar, cinnamon instead of salt.
