Salmon & Avocado Mousse
Sometimes you want to make something quick and easy, and I’m a fan of doing just that. Sure there are times when you want to go that extra mile and make something more elaborate, either to impress your guests or your better half, but right now, how about a meal that’s both filling and tastes awfully good.
Today’s, your opportunity to compare my dish with yours. I don’t know why I call it a moose other than it looks a bit like one and it’s so easy. You don’t have to follow my recipe exactly – if you don’t have the same ingredients it doesn’t matter so long as the salmon and avocado are in the mix.
Here’s what I have in this one. Serves two.
1 small tin of Smoked Salmon
1 carrot finely grated
1/2 Bell pepper (grated) (Capsicum to those folk who live in the southern hemisphere)
2 Radishes (finely grated)
1 tbsp of mayonnaise
salt and pepper to taste
1 tsp of hot chilli sauce
Mix all ingredients in a bowl, scoop into small molds (I wet the inside with a little olive oil), place in fridge for an hour or longer if you have time. Turn molds over onto serving plates, garnish with a little oyster sauce or plum jam sauce, decorate with a slice of cucumber and some cherry tomatoes. Done!
This dish is surprisingly filling and can be used for midday or your evening meal, summer or winter.
It can’t be regarded as a weight loss meal as avocado has a high fat content, even though it’s regarded as one of the healthiest of foods. Then there is the mayonnaise which is again considered fat but you can reduce this by supplementing with low-fat yogurt. Prep time is about 15 minutes, can be served immediately if needed. Enjoy.
What’s so good about this dish is it’s healthy, it’s got to be good for you, take carrot for instance, we all know they are an excellent natural tonic for the eyes and excellent source of vitamin A. It’s also believed to be a good prevention against heart disease and strokes. Don’t eat too many if your on a diet as carrots are sweet.
Avocado, I class this as one of the top super foods, classified as a fruit, is rich in monounsaturated fat and potassium. Researcher says it’s great for the heart, but again don’t eat too many, you will put on weight, moderation is the key.
Bell Peppers; considered to be one of the healthiest foods to eat, high in Vitamin A Vitamin C and B6 believed to be a good fighter of several forms of cancer, fights cataracts, generally good for the eyes.
We live in an age that scientist have completed many studies on food values that are available for us to eat. On the + side we know what’s good to eat and on the – side we know the foods that can harm us, foods that cause obesity,cancers, diabetes and heart disease, yet we still feed our children and ourselves on these foods that endanger our health.
